Instructions

  • 1.   Sauté the onions in olive oil, then add the shallots and garlic cloves, which should not brown. Add the cognac and flambé.

    Add the white wine and let the alcohol evaporate.

    Add the tomatoes, bouquet garni, and fish stock.
  • 2.   Season and cook over high heat to reduce. Blend everything together.
  • 3.   Place the squid in the casserole dish over low heat until tender.
    Cook the rice in the meantime.

  • 500 g of crushed tomato
  • 1 glass of white wine
  • 1 tablespoon of fish stock

  • 500 g of rice (optional)
