Green cabbage and white wine rice

Instructions

  • 1.   Sort the cabbage, cook it whole for about 40 minutes in boiling salted water (check the doneness with a knife).
  • 2.   Remove the cabbage and let the broth simmer for longer.
    Cut the cabbage into quarters, remove the core, and cut the leaves into thin strips.
  • 3.   Lightly brown 100g of butter in a pan. Add the cabbage and rice, simmer for about 4 minutes while stirring constantly.
    Add the wine.
  • 4.   Gradually moisten with the cabbage cooking broth. Occasionally pour in broth so that the mixture is always covered.
    The rice should remain slightly firm.
  • 5.   Add the juice of 2 lemons just before the end of cooking, season with salt and pepper.
    Mix with the remaining cold butter before serving.
