Instructions
1. 1. Mix the flours, oregano, and sesame seeds. Add the butter and mix with your fingertips. Add 10 cl of water and mix, kneading as little as possible. Chill for at least 1 hour.
2. 2. Peel and slice the onions. Mix the cream, mustard, 2 pinches of salt, and 2 pinches of black pepper.
3. 3. Preheat the oven to 180°C/350°F. Roll out the dough into a circle on a baking sheet lined with parchment paper. Spread the mixture onto the dough, leaving a 2 cm border. Place the sliced onions on top and fold the edges of the dough, pinching to create pleats. Bake for 30 minutes. Remove the tart from the oven, switch to the broil setting. Sprinkle the raclette cheese cubes over the onions and bake for an additional 5 minutes. Serve immediately.
