This eggplant caviar is absolutely delicious and adds a gourmet touch. I didn't tell my children it was made with eggplants. In 15 minutes, the salad was ready for the whole family because while the eggplant was heating in the microwave, I had time to cut the raw vegetables and arrange everything on the plates. I added more sweet potato for my husband and children, to fill them up.
