LOW CARB & GOURMET SALAD with a QUICK EGGPLANT CAVIAR, SUGAR-FREE AND LOW CARB

This eggplant caviar is absolutely delicious and adds a gourmet touch. I didn't tell my children it was made with eggplants. In 15 minutes, the salad was ready for the whole family because while the eggplant was heating in the microwave, I had time to cut the raw vegetables and arrange everything on the plates. I added more sweet potato for my husband and children, to fill them up. I put in each plate: - Green salad - Cherry tomatoes - Sliced radishes - Surimi in pieces - Some shavings of Parmesan cheese - 1 slice of sweet potato (already cooked from the day before) - 2 large spoons of eggplant caviar - Some salad dressing and alfalfa sprouts For the eggplant caviar: - 500g of eggplants (about 2) - Juice of half a lemon - 1 garlic clove - 4 tablespoons of olive oil - 2 teaspoons of cumin - Salt and pepper

Instructions

  • 1.   Peel the eggplants and cut them into cubes. Put them in a glass dish with a glass of water. Heat in the microwave for 10 minutes at 850 W. Stir halfway through.
  • 2.   Drain the eggplants well and put all the ingredients in a blender and blend.
