Yellow Mussel Risotto

Instructions

  • 1.   Place the mussels in a pot of boiling water with dry white wine. Season and add the bouquet garni.
  • 2.   Once opened, separate the flesh from the shells. Reserve the cooking juice.
  • 3.   Make a onion fondue and add the rice. Sauté for 2 minutes while stirring.
  • 4.   Pour in broth and 25 cl of mussel cooking juice, as well as saffron. Let cook for 20 minutes and add the mussels.
