Low GI Whole Wheat Bread with Chia Seeds by Sanssucreetsanscomplexe

Another bread recipe! Yes, I never get tired of experimenting with bread! This one is small, cute, and super soft! It has a slightly crispy crust and a delicious rustic bread flavor. I bought a 20 cm loaf pan and I think it's great because the bread turns out small, easy to finish, and stays fresh. The chia seeds add moisture to this bread along with their health benefits. Instructions

  • 1.   Here's the recipe:
    Ingredients for a 20 cm loaf pan:
    180 g of water
    1/4 cube of fresh yeast (I buy them in bulk and freeze them)
    260 g of T150 flour
    1 tablespoon of chia seeds
    10 g of whole milk
    1 teaspoon of salt
  • 2.   Put 180 g of water in the Thermomix bowl
    Add 1/4 cube of fresh yeast (if it's frozen, add it directly to the bowl without thawing)
    Heat for 2 minutes and 30 seconds / 37°C / speed 1, and add 1 more minute if the 1/4 cube is frozen
    Add 260 g of T150 flour, 1 tablespoon of chia seeds, 10 g of whole milk, and the teaspoon of salt
    Knead for 3 minutes
    Line a loaf pan with parchment paper
    Transfer the dough into the pan
  • 3.   Let it rise for 1 hour under a cloth, the dough should double in size
    Preheat the oven to 180°C with a small ramekin of water at the bottom of the oven
    Bake for 35 minutes at 180°C
