Veggie Walnut Meatballs with Low Sugar and Low GI Zucchini Tagliatelle

Veggie walnut meatballs with a hint of walnut flavor. I thoroughly enjoyed them. Served with zucchini tagliatelle. This is the first time I've attempted homemade meatballs and I'm impressed with this recipe. The walnut adds a truly unique taste. My children loved them. For my husband who doesn't like walnuts, I replaced them with ground meat.

Instructions

  • 1.   Meatballs: Mix everything together, shape into meatballs, and cook in a pan for 5 minutes on each side.
  • 2.   Accompaniment:
    Slice zucchini into tagliatelle using a peeler and cook for 5 minutes in boiling water.
    Serve with some crumbled feta cheese and sesame seeds.
    + a little tomato sauce.

Ingredients for servings

  • Boulettes :
  • 400 g of canned white beans (drained weight)
  • 1 egg
  • 50 g of chickpea flour
  • 1 garlic clove
  • 50 g of walnut kernel
  • 60 g of feta
  • 1 pinch of fresh basil
  • Pour le reste :
  • 3 zucchinis
  • 1 pinch of sesame seed
  • 1 pinch of tomato sauce
  • 1 handful of feta
