7-Minute Low-Sugar and Low-GI Vegetable Crumble

Ideal for getting my kids to eat their vegetables. Super simple and quick: - Cut 3 zucchinis and 1 tomato (or other vegetables) and arrange them in a dish. Add 2 tablespoons of olive oil, salt, and pepper. - Crumble topping: 100g of whole wheat flour (T150), 65g of Parmesan cheese, and 40 to 50g of vegetable oil (I use Isio 4). Mix by hand until you have a sandy texture and sprinkle it over your dish. Bake for 30 minutes at 180°C (350°F). Enjoy! For those who are gluten-free, you can replace the wheat flour with buckwheat flour.
