Mexican Low-Sugar and Low-GI Stir-Fry

I love red beans in a Mexican stir-fry, it's delicious! They are rich in fiber, iron, and silicon and have a low GI of 35. Let's take advantage of that! Super quick stir-fry to make

Instructions

  • 1.   Cook the bell peppers in a pan with 2 tbsp of olive oil, add Mexican spices and cumin. When they are cooked, add canned red beans and heat everything up.
    And the final touch that makes a difference is fresh cilantro to add at the last moment.
  • 2.   To accompany, I added a fried egg, spinach leaves, tomatoes, cucumber, and some leftover baked onions.

    I didn't have any avocado, but it's even better with it.

  • 2 red bell peppers
  • 2 tablespoon of olive oil
  • 1 pinch of ground cumin
  • 1 pinch of Mexican spice blend (optional)
  • 1 small canned red bean
  • 1 pinch of fresh coriander
  • 4 eggs (optional)
  • 4 handful of fresh spinach (optional)
  • 2 tomatoes (optional)
  • 1 cucumber (optional)
  • 2 avocados (optional)
