Chickpea and Oat Fajitas with 0 Sugar and Low GI

First time making homemade Mexican fajitas and they're better than store-bought ones. What a culinary discovery, I love it! My kids had seconds!!! The batter is also very quick to make.

Instructions

  • 1.   For 5 or 6 fajitas:
    - 100g chickpea flour
    - 100g oat bran
    - 1 tsp salt
    - 1 tsp cumin
    - 2 eggs
    - 2 tbsp olive oil
    - 250 ml water
  • 2.   Mix everything together and let it rest for 30 minutes.
  • 3.   In an oiled pan, pour a little bit of batter and spread it with the back of a spoon as it is thick. Cook one side and then the other.
  • 4.   Then add your choice of filling.
    For me, it will be: onions, yellow bell peppers, chicken, Mexican spices, gruyere cheese, a few spoonfuls of spicy tomato sauce + served cold: lettuce, tomatoes, cooked zucchini in tagliatelle form.
