The sweet potatoes are baked in the oven for 30 to 40 minutes at 210 °C with a little olive oil. For the filling: chicken, Mexican spices, yellow bell peppers, onions cooked in a pan + grated gruyère cheese added at the end of cooking. Place Greek yogurt on the sweet potato, then add the filling and top with fresh diced tomatoes and cilantro. Delicious! I had some leftover vegetables and onions cooked in the oven that I added.
