Quinoa, Lentil, Fresh Goat Cheese, and Sugar-Free, Low GI Salmon Tartare

I tested a chic and low GI Christmas appetizer this weekend, made with quinoa, lentils, fresh goat cheese, and salmon. Preparation time: only 15 minutes Test approved for Christmas ???? I ate it with avocado and it was even better.

Instructions

  • 1.   For 4 tartares:
    - 150g of pre-cooked quinoa/lentil mix from Jardin Bio
    - 1 shallot and/or 1 small red onion
    - 2 tomatoes
    - olive oil, vinegar, mustard vinaigrette
    - 50g of fresh goat cheese, such as Chavroux
    - 100g of goat curd
    - 4 large slices of smoked salmon
    - salt and pepper
    - chives
  • 2.   1. Mix the quinoa/lentil mix with shallot, onion, and vinaigrette.
  • 3.   2. Add the diced tomatoes after draining the juice. Then add half of the salmon.
  • 4.   3. In a bowl, mix the goat cheeses, salt, and pepper.
  • 5.   4. In individual molds, layer the quinoa mixture, then add a layer of goat cheese. Finish with the remaining salmon and garnish with chives.
  • 6.   Chill for 1 hour before serving.

  • 75 g of quinoa
  • 75 g of canned lentil
  • 1 shallot
  • 2 tomatoes
  • 8 tablespoon of vinaigrette
  • 50 g of goat cheese spread type Chavrou
  • 100 g of goat faisselle
  • 4 slice of smoked salmon
  • 1 sprig of fresh chives
  • salt (according to taste)
  • pepper (according to taste)
