Low-sugar and low-GI frangipane pear or chocolate muffins

A treat for snack time. The taste of frangipane is absolutely divine. And on top of that, these muffins are low-GI because they are sugar-free, made with barley flour (GI = 30) and almond meal (which contains fiber and healthy fats, lowering the GI). Don't waste a minute, get cooking!

Instructions

  • 1.   The recipe:
    - 120g almond meal
    - 50g barley flour and 50g spelt flour (T110)
    - 1/2 packet of baking powder
    - 2 eggs
    - 45g xylitol + 20g acacia honey
    - 120ml almond milk
    - 80g vegetable oil (such as isio 4)
    - a few drained canned pears
    - a few squares of chocolate
    - 3 tbsp rum (not really low-GI, but the alcohol evaporates during cooking and it's essential for the recipe)
  • 2.   1. Mix the eggs, honey, xylitol, then add the milk and finally the oil.
  • 3.   2. Mix the flours, almond meal, and baking powder, then add it to the other mixture. Finish with the rum.
  • 4.   3. Pour the batter into muffin molds, then press thinly sliced pears into each muffin.
  • 5.   For the chocolate version, simply press a square of chocolate instead of the pears.
  • 6.   For the more indulgent option, you can use both pears and chocolate.
  • 7.   Bake for 30 minutes at 180°C.

  • 50 g of hulled barley flour
  • 50 g of t150 spelled flour
  • 1 bag of baking powder
  • 2 eggs
  • 45 g of xylitol
  • 20 g of acacia honey
  • 120 ml of almond milk
  • 80 g of vegetable oil (sunflower for example)
  • 4 pears in syrup
  • 8 dark chocolate 70%
  • 3 tablespoon of rum
