Mexican Mix with an Egg and Low Sugar, Low GI Cheddar

Mexican Mix with an Egg and Cheddar, I love this kind of dish that is quickly made. And it's low GI, of course. It's delicious and the whole family loves it. For children, make sure to cook the peppers well, otherwise they will be too crunchy.

Instructions

  • 1.   The recipe is super easy:
    - 1 can of red beans
    - 1 can of crushed tomatoes
    - frozen Picard peppers to be sautéed in an oiled pan for 10 minutes (this is the only step that takes the longest)
    - cumin, salt, and pepper
  • 2.   Mix everything together and pour into a gratin dish.
    Crack eggs on top and add cheddar, then bake for 15 minutes at 185°C.
    Stop cooking when the eggs are done.
