BROCCOLI ZUCCHINI & GOAT CHEESE SOUP, sugar-free and low GI

BROCCOLI ZUCCHINI & GOAT CHEESE SOUP. Super simple and super delicious. I added my savory granola on top and it's even better.

Instructions

  • 1.   The recipe:
    - 1 bunch of broccoli
    - 2 zucchinis
    - 1/2 onion
    - 10 cl of oat cream
    - 1 bouillon cube dissolved in a little hot water
    - water
    - salt and pepper
    - 1 tbsp of whipped goat cheese from @soignon_officiel per person or more according to your taste
  • 2.   Sauté the sliced onions with 1 tbsp of olive oil (robot 120°C 5 min)
    Cook broccoli, zucchinis, onion with water and bouillon (robot 90°C 25 min)
    At the end of cooking, add the cream and blend
  • 3.   Serve with a dollop of goat cheese mousse and some pepper. And add savory granola (recipe in another post)

  • ½ onions
  • 10 cl of oat cream
  • 1 bouillon cube
  • 1 tablespoon of sour cream
  • 1 water
  • 1 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
