CHILI SIN or CON CARNE with 0 sugar and Low GI

CHILI SIN or CON CARNE in 25 minutes. I tested both versions. Very very good and low GI too! A complete dish, rich in fiber with red beans that have a glycemic index of only 35. The sin carne version contains soy protein and the con carne version contains ground beef. I liked both, but my husband has a psychological aversion to soy so he didn't even want to taste the other version, pffff.

Instructions

  • 1.   The recipe
    - 1 minced garlic clove and 1 minced onion (frozen here)
    - 1 large bell pepper (here a mix of red, yellow, green peppers, cut from frozen Picard)
    - 4 tbsp olive oil
    - 500g cooked red beans, rinsed (1 large can)
    - 600g canned crushed tomatoes
    - 2 to 3 tsp cumin, according to your taste
    - 40 to 60g soy protein (or 350g ground beef for the "con carne" version)
    - salt, pepper
  • 2.   _ sauté the onions, garlic, and peppers with the oil and cumin in a large pot or a food processor (130°C, speed 5) for 5 minutes.

    The whole family enjoyed this dish made last Saturday.
  • 3.   _ add the rehydrated soy protein (or meat), beans, and crushed tomatoes. Simmer (90°C, speed 5 in the food processor) while stirring occasionally for 15 minutes.
  • 4.   Adjust the cumin, salt, and pepper if necessary. If you like it spicy, you can also add some chili.
    The final touch, a few coriander leaves on top (frozen version here).
