PUMPKIN WAFFLES with 0 sugar and Low GI

Golden PUMPKIN WAFFLES loved by the whole family. Can be made into pancakes if you don't have a waffle iron. Pumpkin has a GI of 70 but a low glycemic load, so it can be consumed in small quantities without affecting blood sugar levels. I used low GI flours for this recipe. I created a recipe with very little flour, so they are super moist. We loooove them at my house. We enjoyed them in a savory version, but they can also be made sweet. Which one will you try? #zerowaste: Save the pumpkin seeds, wash them with water, dry them with a towel, then place them on a baking sheet lined with a non-stick mat. Add a little olive oil, salt, and pepper. Bake for 15 minutes at 180 °C (356 °F). Enjoy them in your salads.

Instructions

  • 1.   Recipe for 8 waffles:
    - 300g of plain pumpkin puree
    - 100g of flour (50g of whole wheat T150 flour and 50g of hulled barley flour)
    - half a packet of baking powder
    - 60g of plant-based milk (cashew, oat, coconut...)
    - 2 eggs
    - 50g of fresh cheese (such as Chavroux or St Moret if you want the sweet version of the waffles)
    - 40g of margarine
  • 2.   1⃣ Mix the two flours and the baking powder. Add the milk, then in order, the eggs, the fresh cheese, and finally the melted margarine. Add salt. Mix well.
    2⃣ Incorporate the ready-made pumpkin puree to save time (available frozen) or cook the pumpkin in water and mash it into a puree.
    3⃣ Use a waffle iron. Note that the cooking time is longer than for regular waffles. Do not lift too early!
  • 3.   For the savory version, I like to serve them with a salad and a fried egg or smoked salmon and avocado.
  • 4.   For the sweet version, you can add fruits or a chocolate sauce (melted 70% dark chocolate with a little plant-based milk).
