LIGHT SALMON CHIA MINI CHEESECAKE with 0 sugar and low glycemic index

LIGHT SALMON MINI CHEESECAKE #lowGI. The perfect appetizer for Christmas approved by my family. A savory crust, a light cream, and smoked salmon. The secret to this light cream is the addition of chia gel with cream cheese. In terms of texture and taste, the combination of the two is great, it's creamy without being heavy. My husband, who hates chia pudding desserts, loves this cream.

Instructions

  • 1.   Savory crust (10 biscuits):

    - 100g of whole wheat flour (GI=45)
    - 50g of barley flour (GI=30)
    - 30g of parmesan cheese
    - 1 pinch of salt
    - 30g of water
    - 50g of olive oil
  • 2.   1⃣ Mix the ingredients in order, knead with your hands and roll out the dough. Using a small 8 cm diameter pastry ring, make rounds and place them on a non-stick baking mat.
    2⃣ Bake for about 15 minutes at 200°C, until the biscuits are golden.
  • 3.   CHIA CREAM for 8 people

    - 400g of coconut milk beverage (2% fat)
    - 60g of chia seeds
    - 340g of cream cheese
    - 3g of agar agar (or 2g if using glasses)
  • 4.   1⃣ Heat 200g of coconut milk in a saucepan. Add the agar agar powder and whisk for at least 1 minute while heating (essential for the agar agar to thicken after cooling). Remove from heat and add the remaining milk and chia seeds. Whisk. Let the chia seeds swell for 30 minutes. Whisk to separate the seeds.
    2⃣ In a bowl containing the cream cheese, gradually add this chia gel while mixing. Season with pepper.
  • 5.   ASSEMBLY

    You will also need:
    - 8 slices of smoked salmon
    - 10 radishes
    - 1 lemon
    - sprouted seeds (optional)
  • 6.   In each small pastry ring, place a biscuit, sliced radishes, and the cream. Place 1 slice of smoked salmon on each, a drizzle of lemon juice, and sprouted seeds. Refrigerate for 2 hours.
    Remove the rings at the last moment.
  • 7.   You will have 2 biscuits left for appetizers.
