Sugar-Free and Low GI Sundae

How about a revamped Sundae or low GI ice cream in just 5 minutes? My daughter loves the caramel Sundae from McDonald's... my challenge was to make a low GI version ☺. To replace the caramel, I used Yacon syrup from @yency.co, which has a very low GI. It is made up of soluble fibers that nourish the good bacteria in the gut. And it tastes just like caramel, so it's perfect. Note: its sweet taste decreases significantly when cooked, so use it cold. The kids approve, and so do I.

Instructions

  • 1.   For 2 people (to be made at the last moment):
    ❤ ICE CREAM
    Choose 2 flavors:
  • 2.   1⃣ Classic vanilla version
    - 140g of skyr (or plain plant-based yogurt)
    - 100g of frozen mascarpone for 40 minutes
    - 1 tsp of Yacon syrup (optional)
    - 1 tsp of natural vanilla extract
  • 3.   2⃣ Banana/vanilla version
    - 125g of skyr
    - 100g of mascarpone
    - 1/2 ripe yellow banana, frozen and cut into pieces
    - 1 tsp of natural vanilla extract
  • 4.   Simply put everything in a small blender and blend!
  • 5.   ❤ TOPPING:
    - 1 heaping tsp of Yacon syrup per person
    - some crushed hazelnuts, almonds, or pecans
