SUGAR-FREE AND LOW GI EXPRESS TIRAMISU

Quick idea of the day: use the bowl cake recipe from my book to make the base of my tiramisu, to save time. The result is 100% approved. And today, I sweetened it with yacon syrup that you can find at @yency.co. Its glycemic index is 1. Derived from a tuber (root), it contains soluble fibers, with a sweet taste, which will nourish the intestinal flora. So no fructose or glucose in it. Instructions

  • 1.   For 6 people:
  • 2.   EXPRESS SPONGE CAKE:
  • 3.   1 bowl cake from my book: 20g oat bran, 20g almond powder, 10g oat flakes, 1/2 tsp baking powder, 1 egg, 75g unsweetened applesauce, 30g plant-based milk, 10g acacia honey
  • 4.   1️⃣ Mix the ingredients in order in a bowl and cook in the microwave for 2 minutes at 850 W.
    Wait 5 minutes before unmolding and let it cool.
  • 5.   CREAM:
    - 250g mascarpone cheese
    - 150g sheep's milk or Skyr yogurt
    - 2 eggs
    - 70g yacon syrup @yency.co

    - Coffee
    - 100% cocoa powder
  • 6.   2️⃣ Mix the yogurt with the mascarpone cheese. Add the egg yolks and yacon syrup.
  • 7.   3️⃣ Beat the egg whites until stiff peaks form, then gently fold them into the mixture.
  • 8.   4️⃣ Divide the sponge cake into glasses, soak with coffee, pour the cream on top and refrigerate for 2 hours.
    Sprinkle with cocoa powder before serving.

  • 1 egg

  • 250 g of mascarpone
  • 150 g of skyr
  • 2 eggs
  • 70 g of yacon syrup
  • Suite :
  • 1 cup of coffee
  • 5 teaspoon of 100% cocoa
