Invisible Apple Cake with 0 sugar and low glycemic index

Instructions

  • 1.   For 6 people:
    - 3 large apples (about 350g after cutting)
    - 3 eggs
    - 40g of hulled barley flour (GI=30) @celnatofficiel
    - 125g of plant-based milk (2% coconut milk here)
    - 125g of 15% fat coconut cream
    - 40g of agave syrup (or 50g of Xylitol)
    - 1 tsp of liquid vanilla extract
  • 2.   1⃣ Peel and thinly slice the apples.

    2⃣ Mix the flour with the plant-based milk slowly to avoid lumps.
    Add the eggs and beat the mixture with a whisk.
    Pour in the cream, agave syrup, and vanilla. Mix well.

    3⃣ Add the apples.

    Pour the mixture into a round silicone mold with a diameter of 18 cm (or a loaf pan).
  • 3.   Bake for 45 minutes at 190°C (375°F).
  • 4.   Just a note, hulled barley flour takes a little longer to cook than wheat flour.
