MEXICAN CHICKEN with low sugar and low GI red beans

MEXICAN CHICKEN with red beans. Low GI, #glutenfree in 10 minutes. Truly delicious. I'm not a big meat eater, but a little chicken every now and then with a good sauce is tasty. Since I had little time, I cooked quickly but well. Approved by the family + the cat who also enjoyed a piece of chicken.

Instructions

  • 1.   For 4 people:
    - 1 large can of red beans (GI=35)
    - 3 chicken cutlets
    - 1/2 jar of classic tomato sauce
    - 10 cl of plant-based cream
    - Mexican spices or cumin/coriander
    - 65g of cheddar cheese or more according to your taste
    - coriander leaves (frozen here)
  • 2.   Cut the chicken cutlets into pieces and cook them in a pan with the tomato sauce, spices, and a drizzle of olive oil for 4 minutes, stirring.
  • 3.   Pour in the cream and sprinkle with cheddar cheese. Let it melt for about 5 minutes over low heat until the chicken is cooked. Season with salt and pepper.
  • 4.   Place the warmed red beans on a plate and add the chicken.
  • 5.   Adjust the cream if necessary.
  • 6.   Sprinkle with coriander.

  • 3 chicken breasts
  • 1 cup of tomato sauce
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 65 g of grated cheddar
  • 1 sprig of fresh coriander
