LOW SUGAR AND LOW GI STUFFED ONIONS

LOW GI STUFFED ONIONS #glutenfree my favorite of the month ❤❤❤ I love stuffed vegetables but I had never tried it with onions before. I finally did with this absolutely delicious recipe. Of course, when the kids saw the onion, they made a face... I was prepared for that and they had a deconstructed version.

Instructions

  • 1.   For 2 people (4 stuffed onions):
    - 2 large onions
    - 1 zucchini
    - 6 button mushrooms
    - 2 slices of bacon
    - 50g of sheep's tomme cheese
    - olive oil
  • 2.   Peel the onion and cut off the top. Precook the base of the onions in water for 10 minutes.
  • 3.   Remove the easily removable precooked onion interior, keeping 2 layers. Make 2 shells per onion and cut the rest.
  • 4.   Finely dice the zucchini and mushrooms, put them in a pan with the onion leftovers (top and heart). Cook quickly with a drizzle of olive oil, salt, and pepper.
  • 5.   Fill the 4 onion shells with the sautéed mixture, about 3/4 full, then add the bacon and cheese in small pieces. Bake for 15 minutes at 200°C. Serve the remaining sautéed mixture on the side.
  • 6.   I added chicken to complete this dish.
