FRESH STRAWBERRY & BASIL SOUP with no sugar and low glycemic index

I tried the combination of strawberry and basil in a restaurant over 20 years ago, I loved it and then I forgot about it. This memory came back to me and since I had a beautiful bunch of basil on hand, it was perfect.

Instructions

  • 1.   Super simple, for 2 people:
    - 250g of strawberries
    - 4 large fresh basil leaves
  • 2.   1⃣ Slice the strawberries and cook them in a saucepan until they "melt" a little into a compote. It's quite quick.
  • 3.   2⃣ Pour into a blender with the basil leaves and blend. Put into 2 glasses and refrigerate for 2 hours.
  • 4.   With the heat coming, you will love this refreshing little soup.
