CHIA BERRY & PISTACHIO VERRINE with no added sugar and low glycemic index

CHIA BERRY & PISTACHIO VERRINE #lowglycemicindex #nosugaradded 100% healthy and delicious I wanted to change up my classic dessert of plain coconut yogurt and/or fruit. So, I decided to make a little chia pudding that was a bit indulgent without being high in calories. Here's my freestyle recipe, and I'm happy with the result. I used pistachio puree, but you can also try it with another nut butter.

Instructions

  • 1.   For 2 verrines:
    - 220g of plant-based milk of your choice (2% fat coconut milk used here)
    - 25g of chia seeds
    - 60g of unsweetened applesauce
    - 20g of 100% pistachio puree
    - 20g of 15% fat coconut milk/cream (optional)
    - 6 strawberries
    - a few whole pistachios
  • 2.   1⃣ Make the chia pudding: whisk the plant-based milk with the chia seeds and let it swell for 20 minutes. Whisk again to separate the seeds.
  • 3.   2⃣ In a bowl, mix the applesauce with the pistachio puree, add the coconut cream, then pour in the chia pudding. Whisk everything together.
  • 4.   3⃣ Pour into verrines and place the strawberries in small pieces on top. Sprinkle with crushed pistachios (and even some chopped mint leaves).
  • 5.   Chill before serving.
