Chocolate, Peanut Butter, and Hazelnut COOKIES with 0 sugar and low glycemic index

I made at least 5 tests before finding the right recipe, so I can finally share it with you. My family approved it 100% (without hazelnuts for my daughter and husband, gotta adapt to everyone's tastes). I don't particularly love peanut butter, but in this recipe, it brings indulgence and enhances the cookies.

Instructions

  • 1.   For 9 cookies:
    - 80g of barley flour with a glycemic index of 30
    - 40g of oat bran with a glycemic index of 15 (adds a nice crunch)
    - 50g of almond meal
    - 30g of agave syrup (glycemic index of 15) or 40g of coconut sugar with a glycemic index of 55
    - 1 tsp of baking soda (or baking powder)
    - 50g of plant-based milk of your choice
    - 65g of peanut butter
    - 30g of odorless coconut oil
    - 40g of 70% dark chocolate chips
    - Approximately 18 whole hazelnuts (2 or 3 per cookie)
  • 2.   1⃣ Mix all the dry ingredients together.
  • 3.   2⃣ Add the milk, agave syrup, oil (warmed for a few seconds in the microwave to make it liquid), and peanut butter.
  • 4.   3⃣ Knead the dough in your hands, add the chocolate chips and distribute them evenly. Form balls and flatten them on a perforated baking sheet lined with a non-stick mat. Add the hazelnuts, 2 or 3 per cookie. Bake for 12 minutes at 180°C (356°F).
  • 5.   Wait for them to cool before enjoying.

  • 50 g of plant-based milk
  • 65 g of peanut butter

  • 40 g of dark chocolate chip
  • 18 hazelnuts
