SUCHARD PRALINE ROCKS in a #healthy version with 0 sugar and low GI

Only 20g of added coconut sugar for 9 rocks I used to eat a lot of Suchard rocks... I had to try a low GI version. It's absolutely delicious even with very little sugar ❤❤❤ My son and I finished them all. Plus, it's very easy to make.

Instructions

  • 1.   ❤ The praline paste
    - 20g of coconut sugar
    - 35g of 65%-70% chocolate
    - 80g of 100% roasted hazelnut butter from @kazidomi_fr (or a mixture of 60g of roasted hazelnut butter and 20g of white almond butter)
  • 2.   ⚠ It is very important that your hazelnuts are roasted in the butter.
  • 3.   1⃣ Heat the coconut sugar with 1 tsp of water in a saucepan. As soon as you obtain a viscous liquid, remove from heat.
  • 4.   2⃣ Mix the hazelnut butter (+ almond butter if you added it) and the coconut sugar syrup.
  • 5.   3⃣ Melt the chocolate over very low heat. Then incorporate it into the previous mixture. Let it set in the fridge for 2 to 2.5 hours.
  • 6.   ❤ The coating
    - 65g of 70% chocolate
    - 20g of crushed hazelnuts and/or almonds
  • 7.   1⃣ Melt the chocolate over very low heat. Add the crushed hazelnuts and/or almonds.
  • 8.   2⃣ Take the praline paste out of the fridge, shape it into balls with your hands. Coat each ball with the still warm chocolate and place it on a non-stick paper.
    Refrigerate for at least 1 hour.
  • 9.   ⚠: To melt the chocolate, I use the microwave but at low power and I stop a little before everything is melted. Then I mix until I obtain a nice liquid chocolate sauce🍫
