SUGAR-FREE AND LOW GI HOT DOG EXPRESS

HOT DOG EXPRESS #lowgi #vegetarian or not. Kids: "Mom, can we have hot dogs please?" I couldn't resist, but you know me, I made low GI bread.

Instructions

  • 1.   🧡 Express BREAD for 5 people:
    - 200g spelt flour or small spelt flour
    - 200g hulled barley flour
    - 2 sachets of baking powder
    - 2 large pinches of salt
    - 400g yogurt (sheep's Greek yogurt here)
    - 3 tbsp olive oil
    - 2 handfuls of grated Gruyère cheese
    - 2 eggs (separated white and yolk)
    - seeds: sunflower, poppy, sesame
  • 2.   1⃣ Mix the 2 flours, baking powder, and salt. Add the yogurt and oil.
  • 3.   2⃣ Beat the egg white until stiff and gently fold it in, then add the Gruyère cheese and mix. The dough will be sticky, that's normal.
  • 4.   3⃣ Shape 5 small elongated rolls (not too thick as they will rise during baking) on a baking sheet lined with a non-stick mat.
  • 5.   4⃣ Brush with egg yolk (for a nice golden color) and sprinkle with seeds. Bake for 25 to 30 minutes at 180°C (350°F).
  • 6.   🧡 FILLING:
    - Choice of sausage: here, Herta vegetarian sausage (I wanted to try it, it's not amazing but it's okay)
    - Lou Perrac goat cheese brick
    - Frozen spinach here
    - Canned tomato juice
    - Whole grain mustard
  • 7.   For each roll:
  • 8.   1⃣ Cut the roll lengthwise and spread mustard on it.
  • 9.   2⃣ Place 1 or 2 sausages on a plate. Place the cheese on top. Microwave for about 1 minute until the cheese is melted. Also microwave the spinach.
  • 10.   3⃣ Put everything in your roll and add a tablespoon of tomato juice. Season with pepper. Microwave for another 30 seconds.
  • 11.   The classic kids version 😂: sausage, Gruyère cheese, mustard, reduced-sugar ketchup.

  • 200 g of t150 spelled flour
  • 200 g of hulled barley flour
  • 2 bag of baking powder
  • 2 pinch of salt
  • 400 g of Greek yogurt
  • 3 tablespoon of olive oil
  • 2 handful of grated Gruyère cheese
  • 2 eggs
  • 1 pinch of poppy seed
  • 1 pinch of sunflower seed
  • 1 pinch of sesame seed
  • Garniture :
  • 1 sausage
  • 1 goat cheese log
  • 1 tablespoon of frozen spinach
  • 1 tablespoon of tomato puree
  • 1 teaspoon of whole grain mustard
