Noodles and beef stir-fry in Asian sauce prepared with zucchini and bell pepper, garnished with cashews

Instructions

  • 1.   In a pot, bring a good amount of water to a boil for the noodles. Mince or crush the garlic. Grate the ginger finely. Remove the seeds and slice the red chili. In a bowl, mix the garlic, ginger, red chili, soy sauce, sweet Asian sauce, and beef slices.
  • 2.   Cut the zucchini in half lengthwise, then diagonally into thin half-moons. Cut the bell pepper into strips and the carrot into thin half-moons. Slice the shallot into thin rounds, separating the white from the green parts. Heat 1 tbsp of sunflower oil per person in a wok or sauté pan over medium-high heat. Cook the zucchini, bell pepper, carrot, shallot, and paprika powder for 6 to 8 minutes. Season with salt and pepper.
  • 3.   Meanwhile, cook the noodles covered for 2 to 3 minutes. Add the beef slices and marinade to the vegetables and cook for 2 to 3 minutes. Drain the noodles and add them to the wok or sauté pan.
  • 4.   Serve the noodles on plates. Garnish with cashews and gomasio.
