Instructions

  • 1.   Wash and peel the vegetables, then cut the potatoes and carrots into 1 cm cubes. Cut the leeks into 1/2 cm pieces and finely chop 1 onion. Sauté the vegetables in melted butter over high heat for 5 minutes, stirring in a large casserole dish. Add water, the bouquet garni, and the onion studded with 2 cloves and bring to a boil. Cover and let the vegetables cook for 15 to 20 minutes over medium heat.
  • 2.   Add the cod and salmon cut into pieces of the same size to ensure even cooking, and continue cooking for 10 minutes. Mix the cream and egg yolks in a bowl, then gradually add some of the fish broth to loosen the mixture. Remove the bouquet garni and pour the contents of the bowl into the casserole dish, stirring to create a homogeneous mixture. Finally, add the chopped herbs to the casserole dish and serve.
