Instructions
1. Preheat your oven to 180°C (350°F).
2. Finely chop the shallot, dice the carrot, tomato, and celery, and sauté everything in a pan with a little oil for 5 minutes.
3. Add the ground meat and tomato paste, season with salt and pepper to taste. Cook for another 5 minutes.
4. Wash the zucchini and slice them into approximately 5mm thick strips lengthwise using a mandoline.
5. Arrange a layer of zucchini strips at the bottom of a baking dish, then add a layer of meat. Cover with zucchini, then a layer of béchamel sauce. Repeat with zucchini, meat, zucchini, béchamel sauce until all the ingredients are used.
6. Finish with a layer of zucchini and béchamel sauce, then top with slices of mozzarella. Bake for 30 minutes.
