Zucchini Frittata

Instructions

  • 1.   Finely slice the onion. Wash the zucchini and cut into thin rounds. Salt the zucchini and place in a colander to drain.
  • 2.   In a sauté pan (oven-safe), heat the oil and sauté the onions over low heat for 20 minutes covered.
  • 3.   Then add the zucchini and cook for 10 minutes.
  • 4.   Remove from heat and let cool for 10 minutes.
  • 5.   Beat the eggs with salt, pepper, and Parmesan cheese.
  • 6.   Pour into the sauté pan and return to low heat for 15 minutes.
  • 7.   Once the frittata is set, broil for 2 minutes.
    Serve hot.
