1. Prepare a tomato and garlic concassé.
2. Take 2 sheets of brick pastry, place 2 goat cheeses in the center (or at the end of 2 strips of brick pastry)
3. Cover with the tomato and garlic concassé
4. Then with tapenade
5. Sprinkle with a little chives and paprika.
6. Close the brick pastry like a purse and tie it with a kitchen twine (or fold it like a samosa).
7. Make 6 of them, place them on a hot baking sheet (200°C) for 5 minutes (or longer if they are samosas).
8. Take them out of the oven and place them on a bed of lettuce, season with a little olive oil and balsamic vinegar.
Replace the kitchen twine with a sprig of chives.
