Matcha Green Tea Cheesecake

Instructions

  • 1.   Crush the biscuits into a fairly fine powder. To do this, put them in a freezer bag and "beat" them with a rolling pin.

    Add the melted butter and a pinch of salt.

    Line a 16cm circle with parchment paper and place the biscuit mixture inside, pressing it down firmly. Set aside in the freezer.
  • 2.   Whisk the egg with the sugar.
  • 3.   In a small bowl, whisk the matcha with the liquid cream, gradually incorporating it to obtain a paste. Add this matcha paste to the previous egg/sugar mixture, then add the organic cream cheese (or Philadelphia) and the lime juice.
  • 4.   Pour the matcha cream cheese mixture into the lined 16cm circle, on top of the biscuit base.
  • 5.   Bake the matcha cheesecake at 180°C and immediately lower the temperature to 90°C. Bake for 1 hour and 30 minutes. After removing from the oven, let the cheesecake cool completely before removing the circle and placing it in the refrigerator for at least 10 hours before serving.
  • 6.   Just before serving, sprinkle with organic ultra-premium matcha. Cut the matcha cheesecake into small slices and serve with a chilled raspberry coulis.
