1. Put all the ingredients in the bowl. Attach the dough hook and mix at speed 1 for 10 minutes.
2. Reserve this dough in a bowl covered with plastic wrap for at least 1 hour.
3. Punch down the dough and divide it into 6 portions.
4. Shape each portion into rectangles by flattening with your hand.
5. Place them on a baking sheet lined with parchment paper.
6. Let them rise for 1 hour.
7. Preheat the oven to 180°C (350°F) with convection heat.
8. Moisten the top of each panini and bake for 10 minutes. Be careful, the top should not brown.
9. Let them cool on a wire rack.
