Instructions

  • 1.   Cook the Rice the day before (for about 20 minutes) and add Chia seeds 5 minutes before the end. Mix it with 1 tablespoon of avocado oil - refrigerate.
  • 2.   Cook the lentils in 3 times their volume of UNSALTED water with 1 finely chopped shallot for 30 minutes at a low boil. Drain and mix with the rice - let it cool.
  • 3.   Cut the tomatoes into quarters, the sun-dried tomatoes into strips, the avocado and cucumber into slices and serve as shown in the photo in a shallow plate.
  • 4.   Place a few basil leaves, mix some olive oil with Pesto and drizzle it over!
  • 5.   Enjoy your meal!

  • 8 small tomato
  • 1 cucumber
  • 8 small mozzarella ball
  • 8 sun-dried tomatoes
  • 16 anchovy fillets in oil
  • 1 tablespoon of avocado oil
  • 1 tablespoon of olive oil
  • 1 tablespoon of pesto
  • 5 leaf of basil
  • 5 leaf of mesclun
