Zaeti or Venetian biscuits

Instructions

  • 1.   Preheat the oven to 180 °C (personally, convection oven). In a bowl, mix the 2 flours, baking powder, and salt. In another larger bowl, whisk the egg yolks with the sugar using a wooden spoon. Add the flour mixture, the dried raisins (rehydrated in hot water and well drained), then the room temperature butter, mix until the dough is homogeneous. On a baking sheet lined with parchment paper, arrange small balls of dough the size of a walnut and flatten them. Bake in the oven for 15 to 20 minutes (always monitor the baking of pastries, as not all ovens have the same heat). Let cool and sprinkle the Zaeti with powdered sugar. Photo without powdered sugar:
