CUP EXPRESS LOW GI AND GLUTEN-FREE QUICHES

I made a "mini" version because I think it's cute ???? by using silicone muffin molds. You can use any quiche filling you want ????. Here, I used leftovers from my fridge, butternut squash puree, spinach, and goat cheese.

Instructions

  • 1.   Place several layers of pancakes in the bottom of your molds, about 3. It's okay if they break into several pieces, they will stick together after baking.
  • 2.   Beat the eggs, add the Skyr, the butternut squash previously mashed into a puree, the spinach, and the cumin. Season with salt and pepper. Pour into the molds.
  • 3.   Distribute the bacon and goat cheese into pieces. Bake for 15 minutes at 180°C (356°F).

  • 3 buckwheat pancakes
  • 2 eggs
  • 100 g of skyr
  • 100 g of butternut squash
  • 30 g of spinach sprout
  • 50 g of bacon strips
  • ½ goat cheese logs
  • ½ teaspoon of ground cumin
  • salt (according to taste)
  • pepper (according to taste)
