Low GI Cauliflower Pesto Gratin

Oh cauliflower and pesto, they go so well together ????. I added a little bit of cheese, but in small quantity, here I used goat cheese but you can use parmesan, gruyère... Or nothing! For my children and husband who absolutely wanted a potato gratin ????, I made a mix of half potatoes / half cauliflower in another dish.

Instructions

  • 1.   Cook the cauliflower in water or steam.
  • 2.   Mix the Chavroux with the pesto, add the yogurt, then the cream and eggs. Season with salt and pepper.
  • 3.   In a gratin dish, spread the cauliflower and bacon. Pour the mixture over it. Finish with the crumbled cheese.
    Bake for 25 minutes at 200°C.
