Creamy Italian-style cauliflower puree with croutons & burrata Zero sugar & low GI

Instructions

  • 1.   Steam the cauliflower for about 15 minutes and sauté the diced onions and garlic in a pan with a drizzle of olive oil, covered, until tender.
  • 2.   In a blender, blend the cauliflower with the can of tomatoes, the onion/garlic mixture, 1 large glass of water, salt/pepper. Reheat.
  • 3.   Cut the bread into cubes, mix it with the pesto, and sauté it in a pan for 3 minutes.
  • 4.   Serve the hot puree, add the burrata in pieces, the croutons, and fresh basil + a drizzle of olive oil.

  • 400 g of crushed tomato
  • 1 onion
  • 2 garlic cloves
  • 4 tablespoon of olive oil
  • 2 slice of whole wheat bread
  • 40 g of pesto
  • 1 burrata
  • 8 leaf of basil
  • salt (according to taste)
  • pepper (according to taste)
