Instructions

. Steam the cauliflower for about 15 minutes and sauté the diced onions and garlic in a pan with a drizzle of olive oil, covered, until tender.

. In a blender, blend the cauliflower with the can of tomatoes, the onion/garlic mixture, 1 large glass of water, salt/pepper. Reheat.

. Cut the bread into cubes, mix it with the pesto, and sauté it in a pan for 3 minutes.
4
. Serve the hot puree, add the burrata in pieces, the croutons, and fresh basil + a drizzle of olive oil.
