Asian-style Vegetable Rösti with Zero Sugar & Low Glycemic Index

Instructions

  • 1.   Finely grate the carrots and thinly slice the onions. Blanch the spinach in boiling water for 2 minutes.
  • 2.   Mix the parmesan with the flour, then add the eggs one by one. Add all the vegetables and mix. Season with pepper, but do not add salt.
  • 3.   In a hot pan greased with olive oil, pour the mixture into patties and cook on both sides.
  • 4.   Serve with soy sauce, grated ginger, and sesame seeds for dipping.

  • 2 eggs
  • 2 tablespoon of buckwheat flour
  • 4 tablespoon of grated parmesan
  • 2 tablespoon of olive oil
  • Sauce :
  • 3 tablespoon of salted soy sauce
  • 2 teaspoon of grated ginger
  • 1 teaspoon of toasted sesame seeds
  • pepper (according to taste)
