Instructions

  • 1.   1 Peel the onion and roughly chop it. Put it in the food processor
    fitted with the ultrablade chopping blade and mix at speed 11 for 10 s.
  • 2.   2 Replace the blade with the mixer. Crush the garlic clove with
    the blade of a knife and put it in the food processor with the olive oil and
    paprika. Start the simmer program P1 at 130 °C for 4 min.
  • 3.   3 Peel the pumpkin, parsnips, and carrots, then cut them into
    pieces. Once the 4 min are finished, add the broth and the
    vegetables. Season with salt and pepper. Start the simmer program P2 at
    95 °C for 40 min. Serve hot.

Notes & Suggestions

  • Tip Potatoes, sweet potatoes, Jerusalem artichokes,
    the choice is vast! Don't hesitate to vary the vegetables.
