Sautéed linguine with shrimp, vegetables, and mini spring rolls

Instructions

  • 1.   Preheat the oven to 200 °C and heat a pot of water to cook the pasta. Arrange the mini spring rolls on a baking sheet lined with parchment paper and cook them according to the instructions on the packaging.
  • 2.   Cook the linguine "al dente" according to the instructions on the packaging, then rinse them with cold water.
  • 3.   Shell the thawed shrimp. Mix them with 2 tbsp of olive oil and a little cayenne pepper, to taste. Brown them over high heat in a large sauté pan. Remove them to a plate, add 4 tbsp of oil to the sauté pan, and add the vegetables. Sprinkle with curry and sauté for 4 minutes over high heat.
  • 4.   Add the linguine to the sauté pan, along with the soy sauce and chili sauce. Sauté for 2 minutes over high heat. Adjust the seasoning, add the shrimp, and mix for 1 minute.
  • 5.   Serve immediately, with the mini spring rolls and a lemon wedge. Serve some extra chili sauce on the side.

Notes & Suggestions

  • Tip: You can add some fresh cilantro, peanuts, or thinly sliced green onions to enhance your dish. Are you preparing this dish in advance? Fry the spring rolls without any fat in a non-stick skillet just before serving. They will be nice and crispy.
