1. 1. Sweat the onions in oil for 5 minutes. Add the bay leaf and let it cook for 15 to 20 minutes until it becomes a compote. If necessary, add a little water. Add the thyme, salt, and pepper.
- Line a 24 cm diameter tart pan with pastry dough. Prick the bottom with a fork.
- Remove the bay leaf and thyme, then cover the pastry with the onion compote and sprinkle with Parmesan cheese. Bake for 15 to 20 minutes at 200°C.
