Mustard Rabbit

A classic of French cuisine, mustard rabbit is not difficult to make.

Instructions

  • 1.   Cut the rabbit into 8 pieces with a knife. In a casserole dish with a drizzle of olive oil, brown the pieces on each side. Season with salt and freshly ground pepper, then transfer them to a baking sheet with a rack. Also set aside the casserole dish.
  • 2.   Peel and finely chop the shallots and onion. Add the scored garlic cloves and sweat them gently in the casserole dish where the rabbit was cooked. Add the bouquet garni. Once the mixture has browned, add the mustard and cream. Stir gently.
  • 3.   Deglaze with white wine and let it reduce. Return the rabbit to the casserole dish. Add the chicken broth. Cover and simmer for 1 hour over low heat.
  • 4.   Serve the rabbit on plates or in a dish.

  • 2 tablespoon of whole grain mustard
  • 2 tablespoon of sour cream
  • 1 glass of white wine
  • 10 cl of chicken broth
  • 1 tablespoon of olive oil
  • 1 pinch of salt and pepper
