Coconut and Curry Chicken with Thai Rice

Instructions

  • 1.   Wash, peel, and chop the onions.
    Cut the chicken into thin slices.
  • 2.   Sauté the onions in olive oil over medium heat until they become transparent.
  • 3.   Add half of the curry, then brown the chicken slices, stirring occasionally. Season with salt and pepper.
  • 4.   Reduce the heat, add the ginger, then cover with coconut milk, add the remaining curry, and the coconut flakes.
  • 5.   Simmer for about ten minutes over low heat.
  • 6.   Meanwhile, prepare the Thai rice. Bring a pot of water to a boil. When the water boils, add the rice, cover, and let cook for 12-13 minutes.
  • 7.   Turn off the heat, drain the rice, and cover again for 5 to 10 minutes so that the steam finishes cooking the rice. The rice should be slightly sticky.

  • 4 chicken cutlets
  • 300 ml of coconut milk
  • 3 teaspoon of curry powder
  • 1 teaspoon of fresh ginger
  • 1 tablespoon of coconut chip
  • 3 tablespoon of olive oil
  • 280 g of Thai rice
