1. The day before, cut the beef into large cubes, put it in a bowl and add the red wine. Cover and refrigerate overnight.
2. On the day, peel the onion and cut into quarters.
Peel the carrots and cut into pieces.
Peel the garlic.
3. In the robot's bowl equipped with the chopper, put the onion. Mix at Speed 11 for 10 seconds.
4. Replace the chopper with the mixer. Add the carrots, garlic, and oil. Start the Stew Program P1 for 8 minutes.
5. Meanwhile, coat the beef with flour. When the program is finished, add the beef with the red wine, veal stock, water, and bouquet garni. Start the Stew Program P2 at 100 °C for 2 hours.
6. Serve hot with steamed potatoes or tagliatelle.
